Vegan Tortilla Soup.

Aaron and I planned a dinner/game night with our good friends Bob and Angela. I spent Mon and Tue trying to think of something great to make for dinner that would feed us four and not be pizza or some kind of pasta dish. I decided to try making Tortilla soup. I looked up a few recipes and started making notes of the basic stuff that you need for the Tortilla soup. Here is my personalized recipe:

Vegan Tortilla Soup

Fry up tortillas 4 or 5 depending on how much soup you want to make(I used whole wheat) tear into pieces.

Saute chilies, fresh garlic and seitan

In soup pot mix:

4 cups of vegetable broth

1 cup water

1/2 cup tomato sauce

1 can hominy

1 can pinto beans

1 can corn (or frozen)

add in tortilla strips and seitan saute mix.

Add some cilantro, Chile powder, red pepper, salt and garlic powder.

Bring to boil, let simmer for 20- 30 min

Top with nutritional yeast, lime, more cilantro, and toffuti sour cream.

The soup turned out great! Bob and Angela brought a delicious salad over along with heartbreaking news that they will be relocating to Nashville in the next couple weeks. Total. Bummer. We never did play games but we did go hot tubing and that was the perfect close to our night.

Tomorrow, half day at work and then taking the train to Pdx for a long weekend!
